Here's deliciously moist cake is quick and easy to make, and will be gobbled up by the family quick smart.
Perfect to enjoy with a cup of coffee on a winter afternoon.
Ingredients:
125g self-raising flour
150g honey
100g butter, cubed
100g muscovado sugar
1 ripe banana, mashed
2 medium eggs, beaten
50g ground almonds
25g flaked almonds
Method
Preheat the oven to 180ºC and grease tin. We one approx 28cm x 17cm.
Sift the flour into a mixing bowl and stir in the ground almonds.
Place the butter, sugar and honey together in a small pan and heat gently until completely melted.
Remove from the heat and leave to cool for a few minutes.
Add the melted ingredients to the bowl and add the banana and beaten eggs.
Beat well to give a smooth mixture and pour into the prepared tin. Level the surface and scatter over the flaked almonds.
Bake for 30–35 minutes until firm to touch.
Turn onto a wire rack to cool.
Cut into slices and enjoy!
