Soup makes the ideal family weekend lunch and a cost effective solution to the words – "mum, l'm hungry".
Try this quick, easy & super tasty recipe that’s full of goodness.
Ingredients
800g carrots, roughly chopped
2 small leeks, sliced
2 tsp honey
small pinch dried chilli flakes (optional)
1 bay leaf
2½ litres of vegetable stock
2 tbsp butter
sour cream or yogurt for serving
Method
1. Melt the butter in a large saucepan over a medium heat.
2. Add the leeks to the pan and cook for 3 mins until starting to soften.
3. Add the carrots, honey and bay leaf, then cook for 2 mins. You can also add in chilli flakes at this point if you want that option.
4. Pour in the stock, bring to the boil, then simmer for 30 mins.
5. Blend the soup in batches, return to a clean pan, then season to taste.
6. Bring back to a simmer and serve.
7. To add flavor you can add a swirl of soured cream or yoghurt. We enjoy ours with lovely crusted bread.
