The chances are, if you’ve got this far, that you looked at the name of this recipe and thought …. ‘What?! Watermelon and tomato? Are they kidding?’
Well, no. This is a simple recipe, but it’s also quite special. The reason it works is that the subtle acidity of the tomatoes balances the sweetness of the watermelon, while the feta, radishes, cucumber and dill give it a bit of salty astringency with a spicy and peppery crunch.
There’s nothing better than having watermelon juice run down your chin but it’s also one of those things that, once you cut it open, it needs to be eaten fairly promptly. We hope you do give this a try! You won’t be disappointed.
Watermelon & Tomato Salad with Radishes & Feta
- 1½ cups of grape or cherry tomatoes, halved (sliced tomatoes work okay too)
- 1½ cups cubed watermelon
- 1 Lebanese cucumber, sliced
- 3 radishes, thinly sliced
- 1-2 teaspoons chopped dill
- approximately 60g of crumbled feta
- extra virgin olive oil
- freshly cracked pepper
Method
1. Assemble the ingredients into a large bowl.
2. Drizzle with olive oil and sprinkle with cracked pepper to taste.
3. Serve with your favourite bread if for lunch or a canapé, or use as an accompaniment with grilled meat or fish for dinner.
