Vegie burgers make for a quick and easy meal.

Preparation & cook time: 35 minutes Makes: 8 burger patties
WHAT YOU NEED:
2 cans red kidney beans, rinsed
1 cup rolled oats
120g button mushrooms, sliced
1 small brown onion, chopped
1/4 cup nutritional yeast
1/2 teaspoon ground cumin
1 teaspoon dried basil
4 tablespoons chia seeds, ground
1/2 cup carrot, grated
2 cloves garlic, minced
2 tablespoons tomato sauce
1 teaspoon salt
4 tablespoons coconut oil
HOW TO MAKE:
In a food processor, add oats, herbs, chia seeds, nutritional yeast and process until chopped and mixed (but do not turn into a powder).
Place 1 tablespoon of coconut oil into a fry pan along with the onions and cook for around 5 minutes or until soft, then add mushrooms and cook until tender (for another 5 minutes). Remove from the heat and place into a food processor along with the remaining ingredients and pulse until mixed (being careful not to let the mixture get too wet and mushy).
Using your hands, take even portions of the mixture and roll into balls, then flatten into 8 x 1cm high patties. Using the same fry pan you used to cook the onions/mushrooms, heat up the remainder of the coconut oil and cook 2 patties at a time, turning until brown on each side.
Serve as burgers with wholemeal bread, lettuce and tomato, or on the side of the ‘bottomless pit quinoa salad’.
