Nothing says summer or Christmas time quite like seafood but, for many parents with fussy eaters (see our Mum Opinion piece here), it can be challenging to get children into seafood other than the perennial favourite ‘fish fingers’.
This weekend recipe is courtesy of De Costi’s Seafood and combines healthy smoked salmon with a kids’ favourite – pasta. And best of all, it’s simple and quick to put together on weekdays or after a busy weekend day.
Serves 4
Ingredients
1 tablespoon olive oil
1 garlic clove, crushed
375ml cream
3 tablespoons chopped chives plus a bit extra for serving
¼ teaspoon mustard powder
300g smoked salmon, cut into strips
2 teaspoons lemon juice
500g fettucine or other long, flat pasta
3 tablespoons sun-dried tomatoes, chopped
2 tablespoons grated Parmesan cheese, for serving
Method
1. Heat the oil in a frying pan then add the garlic. Cook it briefly over low heat, being careful it doesn’t burn.
2. Add the cream, chives and mustard powder. Season to taste with salt and freshly ground black pepper, then bring to the boil.
3. Reduce the heat and simmer, stirring often, until the sauce thickens.
4. Add the strips of salmon and lemon juice and stir until heated through.
5. Meanwhile, add the fettucine to a large pan of rapidly boiling water and cook until al dente.
6. Drain well and return to the same pan.
7. Toss the sauce through the pasta and divide among four serving plates.
8. Top with the tomato, chives and Parmesan as desired.
Tip
- An alternative to smoked salmon is smoked ocean trout. Equally delicious and healthy.
