Your busy schedule shouldn't stop you from whipping up healthy meals. Here's a Roasted Vegetable and Lentil Salad recipe made extra delicious using Baxters Caramelized Onion Relish.
Ingredients
1 tablespoons olive oil
2 tablespoons Baxters Caramelised Onion Relish
2 cups cooked lentils
1 cup roasted vegetables of your choice, like carrots, parsnips and onions
Seeds from 1/2 a pomegranate
Handful of fresh mint leaves
Salt, to taste
Pepper, to taste
Method
In a small bowl, whisk olive oil and relish.
In a large bowl, toss lentils, vegetables pomegranate, and mint leaves with dressing. Season with salt and pepper and serve.
