To celebrate the famous Hunter Valley Food and Wine Month in June, we've got a delightful recipe from Matt Dillow of The Deck Cafe to share.
Australia’s oldest wine and food region is warmly welcoming you to dine, wine, learn, play, taste and stay as you get up close and personal with the very best of the Hunter’s renowned winemakers and chefs during a month-long series of over 60 decadent activities.
This dish is perfect for weekend Brunch or Lunch. It's easy to prepare, takes no time to cook, simple to assemble - and looks and tastes great!
Serves 4.
Corn Fritters
- 575grams cooked corn
- 1 brown onion
- 3 egg whites
- 65 ml milk
- 125g plain flour
- ½ tsp paprika
- 1 teaspoon baking powder
- Salt and pepper
1. Combine ingredients.
2. Cook on flat-top or non-stick pan.
Citrus Cream
- 500 grams Sour cream
- Zest off 1 lemon, 1 lime and 1/2 orange
- Salt and pepper
Smashed Avocado
- 4 avocados smashed
- 60 mls lemon juice
- 60mls extra virgin olive oil
- Salt and pepper
Dressing
- 1 Spanish onion diced
- 1/2 cup baby capers
- 1 Tablespoon chopped parsley
- 60 mls red wine vinegar
- 60 mls extra virgin olive oil
Stack ingredients as per photo and top with smoked salmon or salmon gravalax with wild rocket.

Serve with a great Semillon - preferably from the Hunter Valley of course!
