Ingredients:
• 1/4 cup fresh parsley, chopped-
• 2 tsp smoked paprika
• 1 tsp cayenne pepper
• 1 tsp ground coriander
• 1 tsp ground cumin
• 1/4 cup extra virgin olive oil
• 1 garlic clove, crushed
• 8 lamb cutlets
• 4 cups mixed lettuce leaves
• 8 cherry tomatoes, chopped
• 2 tsp lemon juice
• Salt
• Pepper
• 1 tbsp whole cumin seeds
• 4 medium wholemeal pita breads
• 4 tbsp baba ghanoush (storeHbought)
Method:
1. Preheat a barbecue or oven grill to a high heat
2. Combine parsley, paprika, cayenne pepper, coriander, cumin, garlic and three
quarters of the olive oil in a bowl or container. Add the lamb cutlets and turn to
coat evenly.
3. Place the lamb cutlets on the hot barbecue or under the grill and cook to your
liking.
4. While lamb cooks, combine lettuce, tomatoes, lemon juice and remaining olive
oil.
5. Season with salt and pepper to taste.
6. Transfer lamb to serving plates, sprinkle with the cumin seeds and serve with the
salad, baba ghanoush and pita bread on the side.
